The Armchair Quarterback Food/Drink/Tailgating Suggestion Of The Week

English Muffin Mini Pizzas

These are super easy to make and are great for football watch parties where there are a lot of people, especially if there are going to be kids there. If you’ve never made them before, it’s simple. You take English Muffins and use each half of the muffin as a mini pizza crust. You slap on a little pizza sauce, followed by whatever toppings you want, and mozzarella cheese and bake them for about 10 minutes in the oven at 350 degrees. The best part is that everyone can make their own. You don’t have to worry about the kids (or your buddies) arguing over if you should have black olives or not. If there are “health conscious” people there, they can load up on veggies while you pile yours with so much meat that it looks more like a meat pile than a pizza. Everybody wins. Toppings that we have regularly used include:

Ground Beef
Pepperoni
Canadian Bacon
Crumbled Bacon or Bacon Bits
Black Olives
Mushrooms
Green Pepper
Banana Pepper
Jalapeños
Pineapple

The great thing is that you can use whatever toppings that you and your friends and family prefer. We’ve even done parties where everybody coming brought a couple different ingredients. The best part is that it’s really easy and everybody gets something that they like. The bigger and more diverse the group you’re having over, the better off you are with this one. That having been said, my family has made these on nights when it’s just the four of us as well.
