The job of a head coach, in addition to winning games in the NFL is to coach your team up to their strengths and find the weaknesses in your opponent. If Brady already "knows what's coming" it's on Belichick to prove him wrong. Brady, while the GOAT, is still susceptible to turning the ball over (two interceptions in Week 1 against the Cowboys) and making mistakes under pressure. It didn't ultimately matter because the Chiefs couldn't stop the Bucs on defense, but Brady has been known to struggle when the line gets blown up.
