As it turns out, this matchup between the Aggies and the Lobos is also racking in a bunch of the handle for Week 3 as well, according to Wall:
"The pros bet this number at open, which is responsible for the move from roughly -24.5 to -28. Since then, it seems the average Joe’s have continued to lay the number, as it has climbed up to 30 at some shops. I’m not sure what number it is going to take for someone to find value in the Lobos.”
What Week 3 college football game has received the most action for totals?
Alabama vs. Florida (+14.5) | TOTAL: 60
“The total we have seen the most action on is Alabama and Florida," says Wall.
This total was as low as 54.5, but the pros pounded it to 58. Alabama put up 44 points in Week 1 against Miami -- who some considered to be a CFP sleeper -- and 48 in Week 2 against a much inferior Mercer squad. The Tide were not able to cover the big number of -55 in Week 2, but the Bears added a couple of late scores to send the game over the total. The Gators’ offense put 35 points on the board in Week 1 against FAU and 42 against USF in Week 2.

Bettors should be cautious after jumping on the pros late
As Wall mentioned, the public has jumped on two high profile teams and matchups very late into the week. While they may be on the right side of the game, siding with the professionals, a six-point line move is substantial for a spread, as well as a five-and-a-half point swing to the over.
One way to try and grab the same number as the pros is to wait to bet until the games begin. If Texas A&M starts slowly against New Mexico in an 11:00 am local time kickoff, there could be substantial value on an in-play live bet, rather than chasing a higher number pregame. In both of these cases, it would make sense to wait until the number lands where you're most comfortable.
