Arizona Cardinals rookie nicknamed “Pound Cake”

Edwin Jackson was not taken in the 2015 NFL Draft. Luckily for him, the Arizona Cardinals were intrigued by his college tape and gave him a call, setting up a meeting in May. All Jackson had to do was catch his flight, and he screwed it up.

In a desperate attempt to make up for his error, the linebacker presented the Cardinals coaches with his mother’s homemade pound cake. In related news, Jackson is at Arizona’s training camp, working to make the team, according to FOX Sports.

"“I pulled out these pound cakes, the best pound cakes from Georgia, homemade from scratch,” Jackson recalled to the Cardinals Blog. “My Mom, she cooks the best pound cakes in the world.”"

Jackson’s offering was gleefully accepted by the coaching staff, and has earned him the nickname of “Pound Cake.” While the moniker is not overly flattering, Jackson has no issues with the identification.

"“As a rookie, they don’t really know your name,” Jackson said. “But they did not forget those pound cakes.”"

Arizona is playing its first preseason game at the University of Phoenix Stadium on Saturday night against the Kansas City Chiefs. Jackson will likely see some action both on special teams and defense when the second and third teams get action.

Ultimately, Jackson should be sending a sizable portion of his paycheck home as a thanks to his mother. This is a lesson to everyone; when you get in a pinch, call mom and tell her you need help. She’ll come through.
