Kentucky Derby 2015: Cucumber sandwich recipe

Are you looking for a new food to spice up your Kentucky Derby viewing party? Look no further than the cucumber sandwich.


The Kentucky Derby is an annual event that brings about millions of fans, and gamblers, together to watch the quickest sporting event out there.

With the Derby comes watch parties around the countries where friends get together, place bets and relax while eating and drinking mass amounts of food and alcohol. You could always try to be as swanky as the Derby-goers and make some Mint Juleps for your party, but that would require over a day of work — the syrup in Mint Juleps takes a night in the fridge to be ready.

However, if you’re looking to make an impressive food option available at your party relatively easy and cheap, cucumber sandwiches — a tradition — are the way to go.

Don’t know how to make the delicious sandwich, don’t worry. We’ve got you covered with a recipe below.

Ingredients

  • 1 medium cucumber, peeled and seeded
  • 8 ounces cream cheese, softened
  • 1/2 medium onion, finely grated
  • Dash salt
  • Dash white pepper
  • Green food coloring
  • 18 slices bread

Procedures

  • Grate cucumber pulp. Use cheesecloth or a dish towel to squeeze out juice.
  • Combine cucumber with cream cheese, onion, salt and white pepper; mix thoroughly.
  • Add a very small amount (2 drops) of food coloring; just enough to turn the spread a pale green.
  • Divide spread among 9 slices of bread and top with other 9 slices.
  • Remove crusts and slice sandwiches diagonally.

These might look a bit odd, but trust me, these will impress your guests more than you could even imagine. If you’re not looking to impress your guests, well, then I suppose you could always settle for the classic six-foot sub.
